Spaetzle

German potato dumpling noodles.

2 large eggs, beaten
1/4 cup milk
1 cup flour
1/4 tsp salt
dash of pepper
1 tbsp butter

Mix together eggs, milk, flour, salt and pepper. Push batter through a colander with large holes into boiling water. Stir to prevent sticking. Cook 5 minutes or until rise to surface and are tender. Toss with butter. Spaetzle is nice served with fried onions and/or cheese.

Lemon Dill Rice

2 1/2 cups chicken broth
1 cup uncooked rice
1 garlic clove, crushed
1 tbsp fresh lemon rind
2 tbsp fresh dill weed
2 tbsp butter

Mix broth, rice and garlic in a saucepan. Bring to a boil, cover and reduce heat to low. Cook for 20-30 minutes until the broth is absorbed. Stir in the lemon, dill and butter. Serves 4 to 6.

Lazy Perogie Casserole

This is very rich. Excellent with smokies from the BBQ.

9 to 15 lasagna noodles
2 cups cottage cheese
1 egg
1/4 tsp onion salt
1 cup grated cheddar cheese
2 cups mashed potatoes
1/4 tsp salt
1/4 tsp onion salt
1/8 tsp pepper
1 cup butter
1 cup chopped onions

Cook the noodles and line the bottom of a 9x13 inch pan with 1/3 of them. Mix together cottage cheese, egg and 1/4 tsp onion salt. Spoon over noodles, cover with another layer of noodles. Mix the cheddar cheese, potatoes, onion salt, salt and pepper together. Spoon over noodles, and cover with a final layer of noodles. Melt butter and saute onions until clear. Pour over casserole. Cover. Bake 30 minutes at 350 degrees F. Let stand 10 minutes. Serve with sour cream.

Slow Cooker Stuffing

1 package dry chicken noodle soup mix
1 cup water
3/4 cup butter or margarine
1 1/2 cup chopped celery
3 medium onions, chopped
2 1/2 tsp poultry seasoning
3 tsp parsley
1 1/2 tsp sage
8 cups cubed bread

Boil soup mix and water together until broth is dissolved. Cool. Melt butter in a large frying pan over medium heat. Add onions and celery. Cook and stir until soft, but not brown. Remove from heat. Stir is seasoning and soup mixture. Place bread cubes in a large bowl. Pour the celery and soup mixture over the bread and toss lightly until well combined. Pour into slow cooker and cook on low 3 to 4 hours. Makes lots!

Lazy Perogie Dumplings

2 cups cottage cheese
2 large eggs
1 tsp salt
enough flour to make a stiff dough

Mix everything together. Drop by tablespoons into boiling water. Boil for 5 minutes and drain. Fry some onions in butter and add with the dumplings into a casserole dish. Cover and bake at 350 degrees F for 15 minutes.
