Honey Oatmeal Raisin Cookies

1 cup butter, softened
1/3 cup sugar
1/2 cup honey
1 tsp baking soda
2 cups oatmeal
1/2 tsp salt
1 tsp vanilla extract
1/2 cup boiling water
1 1/2 cups flour (can substitute whole wheat flour)
1/2 cup raisins

Cream together butter, sugar, honey and vanilla until light and fluffy. Dissolve the soda in boiling water. Add to creamed mixture, gradually blend in the dry ingredients. Mix well and stir in the raisins. Drop onto an ungreased cookie sheet. Flatten with a fork. Bake at 350 degrees F for 10 to 12 minutes.

Banana Oatmeal Cookies

1 1/2 cups flour
1 cup sugar
1/2 tsp baking soda
1 tsp salt
3/4 tsp cinnamon
1/4 tsp nutmeg
3/4 cup shortening
1 egg, well beaten
1 cup mashed ripe bananas
1/2 cup raisins
1 3/4 cup rolled oats

Preheat oven to 375 degrees F. Mix first 6 ingredients together in a large bowl. Cut in the shortening. Add the egg, bananas, raisins and rolled oats. Mix well. Drop by teaspoonfuls about 1 1/2 inches apart on an ungreased cookie sheet. Bake 12 to 15 minutes. Makes approx. 3 1/2 dozen cookies.

Whole Wheat Chocolate Chip Cookies

1/2 cup butter or margarine, softened
3/4 cup brown sugar
1 egg
1 tsp vanilla
1 cup whole wheat flour
1/2 tsp baking soda
1/4 tsp salt
1 cup rolled oats
3/4 cup granola
1 cup chocolate chips

Preheat oven to 350 degrees F and grease baking sheets. Beat together butter, sugar, eggs and vanilla until light and fluffy. Add the rest of the ingredients. Mix well. Drop by tsp 2 inch apart on a cookie sheet. Bake 10 minutes or until lightly browned. Makes about 40 cookies.

Chewy Chocolate Chip Oatmeal Cookies

1 cup butter, softened
1 cup packed brown sugar
1/2 cup white sugar
2 eggs
2 tsp vanilla
1 1/4 cups flour
1/2 tsp baking soda
1 tsp salt
3 cups quick cooking oats
1 cup chocolate chips

Cream butter and sugar, add vanilla, beat in the eggs one at a time. Combine the dry ingredients and mix well. Drop into an ungreased cookie sheet and bake 12 minutes at 350 degrees F. Cool in the cookie sheet before removing to cooling racks.
