Savory Beef Stew

1 cup sun dried tomatoes (not in oil)
1 1/2 lbs stewing meat, cut into 1 inch cubes
1 medium onion, cut into 8 wedges
1 1/2 tsp seasoning salt
1 bay leaf
2 cups water
2 tbsp flour
12 small new potatoes
1 (8 oz) bag of baby cut carrots

Preheat oven to 325 degrees F. Cover dried tomatoes with boiling water and let stand for 10 minutes. Drain and coarsely chop. Mix tomatoes, beef, onion and bay leaf in a 4 quart casserole dish. Mix the flour with water and stir into beef mixture. Cover and bake for 2 hours, stirring once. Add in potatoes and carrots. Cover and bake and additional 1 to 1 1/2 hours.

Best Ever Meatloaf

It really is the best our family has tried.
1 1/2 lb extra lean ground beef
1 cup shredded cheese
1/2 cup shredded carrots
1 onion, very finely chopped
3 slices of bread, made into crumbs
2 eggs
2/3 cup milk
2 tsp salt
1/4 tsp pepper
1/4 cup brown sugar
1/4 cup ketchup
1 tbsp prepared mustard
Mix the first 9 ingredients together in a large bowl (or use a large Ziploc bag for less mess). Pack into a 9x9 casserole dish. Combine the remaining ingredients and spread over the meat mixture. Bake @ 350 degrees F for approx. 1 hour ( check with a meat thermometer). Let stand in dish for 10 minutes before cutting.
