2/3 cup sugar
1/2 cup vegetable oil
2 eggs
2/3 cup mashed ripe bananas
1 tsp vanilla extract
1 2/3 cups flour
1 tsp baking soda
1/2 tsp salt
3/4 cup chopped fresh strawberries
Combine sugar, oil and eggs. Stir in the banana and vanilla. Combine the dry ingredients and add to the liquid; stir to combine only. Fold in the berries. Bake in greased muffins tins at 375 degrees F for 17 to 21 minutes. Immediately remove from tins to cool. Makes 12 muffins.

Banana Chip Muffins
These are a nice change from the typical "sugary" banana muffin.
1 3/4 cups flour
1/4 cup sugar
2 1/2 tsp baking powder
3/4 tsp salt
1 egg
1/2 cup milk
1/3 cup vegetable oil
1/2 cup mashed ripe banana
1/2 cup unsweetened applesauce
1 cup mini semi-sweet chocolate chips
Combine the flour, sugar, baking powder and salt. Combine the egg, milk, oil, banana and applesauce; stir into dry ingredients until just moistened. Fold in the chips. Fill greased muffin tins 2/3 full. Bake at 400 degrees F for 20 minutes or until a toothpick comes out clean. Cool 5 minutes in tins and then remove to rack to cool. Makes 12 muffins.

Gingersnap Mini Muffins
Best eaten fresh, or freeze.
1/4 cup white sugar
1/4 cup brown sugar
1/2 cup canola oil
2/3 cup molasses
1 egg
1 1/2 tsp baking soda
1 tsp cinnamon
1 tsp ginger
1/2 tsp cloves
2 1/2 cups flour
1 cup light sour cream
Combine everything except the flour and sour cream. Beat well on medium speed for 2 or 3 minutes. Add the flour and sour cream and beat an additional 1 or 2 minutes. Grease mini muffin tins and fill 3/4 full. Bake at 375 degrees F for 10 to 12 minutes. Let stand 5 minutes in tins and remove to racks to cool. Makes 48.

1 1/4 cup milk
1/2 cup butter or margarine, melted
1/3 cup liquid honey
1 cup grated peeled apple
1 1/2 cup graham crumbs
1 1/2 cups flour
1 tbsp baking powder
1 tsp cinnamon
1/2 tsp salt
Grease muffin tins or line with paper baking cups. Blend together the egg, milk, butter and honey. Stir in the apple. Combine the dry ingredients. Add the liquid ingredients and stir until just moistened. Generously fill each muffin liner to the top. Bake at 400 degrees F for approx. 20 minutes. Makes 12 large muffins.
