Caramelized Onion Boneless Pork Loin Chops

4 (4 oz) boneless pork loin chops
1/4 tsp sage
1/4 tsp thyme
1 large large onion, sliced
1 cup water
1/4 tsp salt
1/4 tsp pepper

Combine the sage and thyme and rub on both sides of the chops. In a skillet, brown the chops, add the onion and water, bring to a boil. Reduce heat, cover and simmer for 20 minutes. Turn chops over and add salt and pepper. Cover and simmer another 20 minutes, or until the water is absorbed and the onions are golden.
