Carrot Casserole

2 cups mashed cooked carrots (approximately 8 medium carrots)
1 cup grated cheddar cheese
1 tbsp grated onion
3 eggs
1 cup milk
1/2 cup cracker crumbs

Mix all together. Place in a buttered 9x9 casserole dish and dot with butter. Bake for 45 minutes, or until center is set, at 350 degrees F.
